Hot Cross Buns

 

½  – 3 c.Flour

2 tbsp.Sugar

1 tsp.Salt

1 tbsp.Yeast, Quick rise

½ tsp.Cinnamon

¼ tsp.Ground cloves

½ c.Raisins

1c.Warm Water, from the tap

1Egg

2 tbsp.Oil

 

1. In a large bowl, combine 1 cup of flour, sugar, salt, yeast, cinnamon, cloves and raisins; blend well.

2. Add water, egg and oil to the flour mixture and beat for several minutes to dissolve the yeast.

3. Gradually stir in more flour ½ c. at a time until a ball of dough that is not sticky forms in the middle of the bowl.

4. Turn the dough out onto a lightly floured counter and knead for 8-10 minutes only adding more flour if the dough sticks to your hands. ( you may not use all of your flour)

5. Let the dough rest for 15 minutes and then shape into 12-18 buns.

6. Let the buns rise over night in the fridge.

7. Bake at 350 degrees for 15 – 20 minutes until golden brown.

8. Remove buns to a cooling rack and let cool.

9. When cool pipe an icing cross on the top of the bun.

Frittata


Frittata

1Potato, chopped

Small onion, chopped

2 tsp.Margarine or oil

1-2sl.Ham, or meat of choice, sliced

4Eggs

¼ c.Milk

¼ tsp.Herbs (basil, oregano or thyme)

½ c.Cheese, grated

 

1. Sauté potato and onion in the margarine until browned and tender.

2. Mix in the ham.

3. Beat eggs, milk and herbs together and then pour over the potato and onions

4. Cover mixture and cook on medium-low heat until set

5. Sprinkle cheese on top and cut in wedges to serve

Homemade Pasta



Homemade Pasta


1 c.         All Purpose Flour

½ tsp.         Dried Basil, marjoram, sage or rosemary, crushed (optional) 

½ tsp.         Salt

Egg, beaten

3 Tbsp.     Water

½ tsp.         Olive Oil or Cooking Oil



In a large bowl stir together 1 cup of flour, basil, marjoram, sage or rosemary (if desired) and salt. 


Make a well in the center of the dry mixture.


In a small mixing bowl combine eggs, water and oil.


Add liquid mixture to dry mixture; mix well


Sprinkle the counter with flour and turn the dough out onto the floured surface. Knead the dough until it is smooth and elastic (8-10 minutes) adding more flour if the dough sticks to the counter or hands.


Cover and let the dough rest 10 minutes. 


Divide the dough into two equal portions and put it through the pasta machine as follows:

-    roll the dough through the thickest setting 8 times, dusting with four and folding in three each time. 

-    turn the rollers to the next setting and roll the dough through. Do not fold and only flour if the dough seems sticky.

-    continue putting the dough through the rollers changing the rollers  to a narrower setting each time until the 6th setting has been reached (do not fold and flour).

-    cut dough as required for the recipe. I

Chinese Fried Rice


Chinese Fried Rice

1Egg

¼ tsp.Salt

2 tbsp.Oil

Green onion, cut in ½ inch slices

½ c.​    Sliced mushrooms

½ c.​    Diced ham

3 c.  ​   Cold rice

½ c.​     Peas

2 tbsp.Chicken Broth

3 tbsp.Soy sauce

 

1. Lightly beat the eggs and salt.

2. Heat 1 tbsp. of the oil in a frying pan on medium heat. Add the egg and scramble until cooked. Remove to a dish.

3. Add remaining oil to the wok and sauté the onions, mushrooms and ham for 1 minute.

4. Add the rice to the pan and separate the grains of rice with a fork.

5. Add the peas and the scrambled egg and stir until mixed.

6. Stir in broth and soy sauce and mix until combined. Serve immediately

Pan Fries lab




Pan Fries
2 Tbsp.                         Canola Oil
4                                  Unpeeled potatoes, diced
1                                  Small onion, diced
½ tsp.                           Seasoning Salt
½ tsp.                           Ground Black Pepper

1. Pour oil into a large frying pan and heat on medium heat until oil shimmers. (2-3 minutes)
2. Put potatoes and onions into heated frying pan and spread out evenly.
3. Let potatoes sit undisturbed for 4-5 minutes to get golden brown. (Do not stir)
4. When potatoes are golden on one side, use a flipper and flip potatoes over to brown on another side.
5. Continue flipping and cooking until potatoes are golden brown and cooked all the way through.

6. Season with salt and pepper just before serving.
